ONCE USED

EX-BOURBON BARRELS

(200 LITRES)

These are sourced directly from Kentucky. Once-used barrels have only ever been used to mature bourbon, usually for about 4 or 5 years, although sometimes longer. This means that the oak from which the barrels are made, is still very active, releasing flavour compounds (e.g. oak lactones, vanillin, tannin, hemicelluloses, etc.) rapidly into the maturing spirit. These are the compounds that give bourbon much of its flavour, so it’s not surprising that Fresh barrels confer bourbon/vanilla character on the maturing spirit. This sits very nicely alongside the fruity and creamy characteristics of our whey based spirit.

These barrels are ideal for maturing any spirit for up to 10 years.

Most of Somerset Spirit’s production is filled into these casks, currently sourced from Heaven Hill® distilleries.

HOW IT WORKS

1. CHOOSE YOUR CASK

Choose from our signature casks (depending on availability) – Virgin American Oak, One use Heaven Hill ex-bourbon oak, ex-Bordeaux red wine oak, Virgin Somerset Oak (limited edition).

2. CONTACT US

You can purchase directly from our website and we will take care of the rest or email us to request a barrel of your choice.

3. THE PAPERWORK

We will send you our full terms and conditions for you to sign along with your cask owner’s certificate.

4. THE NAME

Your barrel will have your name printed on to the front and be on display in our distillery, your name will also be displayed in our bar under the list of owners.

5. TIME TO MATURE

Your cask will mature in the heart of Somerset’s air, for up to 10 years in your chosen oak cask.

6. VISIT YOUR CASK

Cask owners will be invited to exclusive Cask Owners Events and will be able to sample their maturing spirit at set times agreed with the distillery.

7. BOTTLING OR REMOVAL

We will bottle your spirit at standard industry bottling rates. Your bottles can be delivered to you or collected from the distillery.

You also get to keep the barrel.
